LOUISE'S FRESH APRICOT SAUCE
Ingredients:
7 gms water or less
30 gms apricots (is 10 Apricots)
10 gms castor sugar or less if already sweet
Step 1 Chop 10 ripe sweet apricots with stones removed.
Step 2 Put them in a pan with the water and the sugar (if the apricots are really juicy and sweet you will need less water and sugar).
Step 3 Stir or mash the apricots as they are cooking over the heat. Do not cover.
Step 4 Place into the metal sieve which is over a bowl to catch the puree . Help the apricot sauce through using the back of a spoon until you are left with the fibres.
Step 5 Spoon a small amount onto the plate beside the slice of Nutty Tart as an attractive addition of colour to the dish.
