LOUISE'S VANILLA ICE CREAM

Ingredients:
100g caster sugar
4 large egg yolks
300ml whole milk
300ml clotted cream or thick cream
2 vanilla pods
1 drop glycerin
2 teaspoon walnut liqueur
Tiny tiny pinch salt
3 bags of ice and bowls

Step 1 Whisk sugar and eggs

Step 2 Add milk little by little into the bowl of eggs and sugar, whisking all the time and transfer 'custard' back to the pan. Stir and allow it to thicken. Ready when it coats the back of a spoon.

Step 3 Strain and put aside to cool down. (place pan in bowl of ice)

Step 4 Combine 2 vanilla pod pulp and cream
and glycerin and whisk in to custard

Step 5 Pour the mix into the ice cream maker.

Step6 Churn for roughly 20 minutes in ice cream maker

Step 7 Place it in freezer for 5- 6 hours or until it sets
in use shallow Tupperware churn once every 2 hours

Step 8 Serve Scoop some ice-cream balls and curls next to the Nutty Tart

Plating Up:
Drizzle ice cream and plate with Walnut Liqueur

Preparation time:
Whole process starts 5-6 hours before, but hands on time is about 40 mins
